Breaking Bread this Autumn Season

Autumn is officially here and I am ready to start enjoying the changes that come along with this new season. For me, this means creating the feeling of autumn in my home. I love to do this simply through the use of colors, textures, nature, and of course food.

My friend Kristen from Ella Claire Inspired asked me to participate in her “Tastes of the Seasons” blog hop again this year. What an honor! I am sharing a favorite recipe that my family enjoys this time of year in this post. There is just something special about making my own bread for my family, but for some reason it seems extra special at this time of year. I’m not sure if it is the bread making process, the scent that fills my home, or the satisfaction of knowing that everyone will be smiling from ear to ear when they walk in the door and smell that familiar smell. Whatever the reason, I have always felt that the work was well worth its return with making my own bread.

I have never tried my hand at making an herb butter, but I thought it would be a wonderful use for all of my herbs that I grew this summer in my garden. I do have to say that I love using ingredients that I cared for and grew myself. I’m not successful at growing much in the garden, but I mastered growing herbs!

Sea Salt Dinner Rolls Recipe

Ingredients:

1 1/2 cups warm water
1 tablespoon yeast (I used active dry yeast and it worked great)
2 tablespoons sugar
2 tablespoons butter, softened
1 teaspoon salt
4 cups flour, more or less as needed
3 tablespoons melted butter (to be brushed on top)
sea salt (to be sprinkled on top)

Method:

Preheat the oven to 400 and line a 9 x 13 pan with parchment paper or spray with cooking spray.

  1. In a large bowl  dissolve the yeast and sugar in the warm water and let stand for five minutes, or until foamy.
  2. Add the butter, salt, and 3 cups of flour, and mix until combined.
  3. Add additional flour, 1/4 cup at a time, until the dough pulls away from the sides of the bowl and is only slightly sticky to the touch (do not add to much flour)
  4. Knead 3-5 minutes
  5. Cover and let rise 20 minutes
  6.  Gently punch the dough down and divide into 20 equal sized pieces
  7.  Roll each piece into a ball and space evenly in the pan
  8. Brush with melted butter, and sprinkle with sea salt
  9. Let the dough rise for an additional 15-20 minutes
  10.  Bake 13-15 minutes, or until golden brown
  11. Remove when done and brush with butter

Herb Butter Recipe

Ingredients:

1/2 cup (1 stick) unsalted butter, softened
2 cloves garlic, minced
1/2 tablespoon fresh rosemary, minced
1/2 tablespoon fresh thyme, minced
1/2 tablespoon fresh chives, minced

Method: 

In a bowl, mix together the butter, garlic, and herbs until well blended.
